45MIN
EASY
3 sheets of rice ⚪️
3 nori seaweed 🌿
1 carrot 🥕
½ cucumber 🥒
¼ of leek 🧅
½ ripe mango 🥭
1 tablespoon of mint leaves 🌿
60 g of Sant Andreu cheese 🧀
Sunflower oil for frying 🍳
For the sauce:
Juice of ½ lime 🍋
2 tablespoons of soy sauce 🥢
1 tbsp sweet chilli 🌶️
½ teaspoon Dijon mustard 🍯
1 tsp tamarind paste 🌴
1 tsp tamarind paste 🌴
1 tbsp tamarind paste 🌴
1 tsp tamarind oil
4 tablespoons sunflower oil 🌻
Salt and pepper to taste 🧂
Garnish (optional):
Bean sprouts (or radish sprouts for those who prefer a spicier flavour) 🌱
Gluten-free 🌾 (Gluten-free version: replace soy sauce with tamari)
1. Dice the carrot, cucumber, leek and mango. Mix together in a bowl with finely chopped mint leaves. Separately, cut the Sant Andreu cheese into cubes and set aside in the fridge. 🥒🥭
2. Prepare the sauce by whisking all the ingredients until emulsified. Mix the vegetables with this emulsion and refrigerate. 🥗
3. Wet the rice sheets and stick them on top of the nori seaweed, trying to cover all the space. Cut into 4 pieces. 🍙
4. Heat sunflower oil in a frying pan. Fry the rice and nori squares one by one in the oil until crispy. Drain on kitchen paper. 🍳
5. All that remains is to assemble... Place the dressed vegetables and the Sant Andreu cubes on each square (on top of the seaweed). Garnish with sprouts if desired. Serve immediately!
Buon appetito!
