Our original semi-cured is made with a high content of lupins, one of the legumes richest in plant protein and naturally gluten-free. This ferment makes the most of their benefits: it’s nutritious, light, rich in fiber, and easy to digest. A flavorful and wholesome fermented cheese that proves that when you start with such a powerful ingredient, you don’t need to add much more.

Lupins — legumes of the Lupinus genus — stand out for their exceptionally rich nutritional profile. They contain a high level of plant protein (≈ 30–40% dry weight), making them an excellent protein source for vegetarian and vegan diets. They are also naturally high in both soluble and insoluble fibre, supporting gut health, digestive regularity, and blood-glucose control.
Multiple studies indicate that including lupins in the diet can help improve cardiometabolic health markers. Their combination of plant protein, fibre, low glycaemic index, and bioactive compounds (including alkaloids and polyphenols) has been associated with reduced LDL cholesterol, improved insulin sensitivity, and a healthier lipid profile. Lupins are also naturally gluten-free, making them suitable for people with coeliac disease or gluten intolerance.
